FYI – I was at a Berkshire School event which was catered by a wood-fired pizza truck (Actually 2 trucks) out of Waterbury, CT. I believe it was these guys: https://www.pizzafiretruck.com/packages.html
They have a converted fire truck. Was very good – just an option!
